Do all this and more at the Tenuta di Capezzana's Wine and Culinary Center, where several courses are held for food professionals each Spring and Fall. The program is coordinated by Faith Willinger and directed by Countess Lisa, whose cooking has earned the heartfelt praise of both Marcella Hazan and The Wine Spectator. Participants work with Patrizio, the Contini Bonaccossi Family's chef, and also visit the kitchens of Carmignano's best restaurants to learn the techniques used in preparing Tuscan specialties. One of the highlights of the program is a visit to Fabio Picchi's Cibreo, a renowned Florentine restaurant that has been instrumental in the rediscovery of many traditional dishes.
The duration of the courses is 5 days, and they are limited to 12 people. Participants are hosted in a wing of the Capezzana Estate, which offers a magnificent view of Florence; they have free access to all facilities, including the swimming pool and jogging trails.
